Why does coffee curdle in soy milk (and how do you fix it)?

You've done everything right. Fresh soy milk, nice hot coffee, maybe even a little latte art attempt (ambitious, we respect it). And suddenly ... clumps. Sad, lumpy, definitely-not-a-latte clumps.
