You know what? This might be our most favourite Colombian EVER. It’s the gentle hint of berries that does it, layered between the toffee and caramel sweetness. Pretty darn nice.

These happy beans are grown on a high-altitude farm near La Plata in Colombia’s Huila department. The farm is one of two operated under the Villa Aroma name and is cultivated by experienced local growers with a focus on sustainable practices and quality.
Castillo, a variety well-suited to the region’s volcanic soil and elevation, thrives in these conditions. The washed process used here involves hand-harvesting ripe cherries, followed by pulping, fermentation, and a clean water wash to develop clarity and balance in the cup.
Backed by the Colombian Coffee Federation’s quality programs, the farm adheres to strict post-harvest protocols that enhance the final profile of the coffee. This Castillo lot stands out for its crisp acidity, layered sweetness, and refined structure—an excellent representation of Huila's specialty coffee potential. When roasted by Dancing Goat Coffee Roasters, the acidity balances out, and the subtle sweetness abounds
